  • 1 cup Green Beans
  • 1 cup Cauliflower
  • 1/2 cup Yam
  • 2 tbsp Coconut Oil
  • 1 tsp Mustard Seeds
  • 1/2 tsp Urad Dal
  • 1/4 tsp Asafoetida
  • 1/2 tsp Cumin Seeds
  • 1/4 cup Cilantro
  • 1 tbsp Ginger Paste
  • 1 cup Coconut Milk
  • 2 tbsp Lime Juice
  • to taste Salt

    Heat the coconut oil in a large pan over medium heat. Add mustard seeds, urad dal, asafoetida, cumin seeds, and sauté for 1 minute.

    Add the sliced carrots, green beans, cauliflower, and yam to the pan. Sauté for 5 minutes, or until the vegetables are tender.

    In a blender or food processor, blend the cilantro, ginger paste, coconut milk, and lime juice to make the coconut-lime sauce.
